Shaped by the varied merroir of our unspoiled landscape, Irish oysters can be identified by and appreciated for their distinct characteristics.

The perfect teardrop shell with smooth white enamel.

Firm, meaty, clean, crisp, umami-rich. A lingering sweet iodine flavour with a hint of nut.

Oysters have a range of exceptional nutritional qualities. Rich in protein, which helps the build and maintenance muscle and low in fat, oysters are an ideal part of a well-balanced diet. One portion of oysters contains 100% of the daily requirement of vitamin B12 and high quantities of the five essential minerals associated with the brain.

In September 2019, I had the opportunity to taste oysters with the chefs of the Irish Beef Club. What struck me most was the full, creamy flesh. Since that moment, I only have oysters from Ireland.
